60 gr de beurre<br>\u2022&nbsp;&nbsp; 25 gr de farine<br>\u2022&nbsp;&nbsp; 75 gr de sucre glace<br>\u2022&nbsp;&nbsp; 25 gr de poudre d&rsquo;amande<br>\u2022&nbsp;&nbsp; 60 gr de blancs d\u2019\u0153ufs<br>\u2022&nbsp;&nbsp; brisures de pistaches<\/p>\n\n\n\n<p>Pr\u00e9chauffer le four \u00e0 200\u00b0C. <\/p>\n\n\n\n<p>Metter le beurre en morceaux dans une casserole et faites le chauffer doucement jusqu&rsquo;\u00e0 ce qu&rsquo;il prenne une belle coloration.&nbsp;<\/p>\n\n\n\n<p>Dans un saladier, m\u00e9langer les produits secs et ajouter petit \u00e0 petit les blancs&nbsp;d\u2019\u0153ufs.&nbsp;<\/p>\n\n\n\n<p>Ajouter ensuite le beurre noisette refroidi et filtr\u00e9.&nbsp;<\/p>\n\n\n\n<p>Mixer quelques pistaches et ajouter cette brisure au financier puis m\u00e9langer.<\/p>\n\n\n\n<p>Verser la p\u00e2te dans un moule de 18 cm de diam\u00e8tre. <\/p>\n\n\n\n<p>Enfourner \u00e0 200\u00b0C pendant 17 minutes puis r\u00e9server sur une grille.<br><em><br> <\/em><\/p>\n\n\n\n<p class=\"has-background\" style=\"background-color:#ffe8e8\"><em><strong>Pour la gel\u00e9e de fraise&nbsp;<\/strong><\/em><strong><em>: (\u00e0 faire la veille)<\/em><\/strong><\/p>\n\n\n\n<p>\u2022&nbsp;&nbsp; 200 gr de pur\u00e9e de fraises<br>\u2022&nbsp;&nbsp; 10 gr de jus de citron jaune<br>\u2022&nbsp;&nbsp; 3,5 gr de g\u00e9latine<\/p>\n\n\n\n<p>Faire ramollir la g\u00e9latine dans de l\u2019eau froide.  <\/p>\n\n\n\n<p>Dans une casserole, chauffer la pur\u00e9e de fraises avec le citron&nbsp;et portez le tout \u00e0 \u00e9bullition.&nbsp;<\/p>\n\n\n\n<p>Hors du feu, ajouter la g\u00e9latine \u00e9goutt\u00e9e et essor\u00e9e. <\/p>\n\n\n\n<p>Laissez refroidir. <\/p>\n\n\n\n<p>R\u00e9servez&nbsp;ensuite au&nbsp;cong\u00e9lateur.&nbsp;<br><br><\/p>\n\n\n\n<p class=\"has-background\" style=\"background-color:#ffe8e8\"><em><strong>Pour la&nbsp;mousse \u00e0&nbsp;la vanille :<\/strong> <\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>144 gr de cr\u00e8me liquide enti\u00e8re<\/li><li>1 gousse de vanille<\/li><li>48 gr de jaunes d&rsquo;oeufs &nbsp;<\/li><li>6 gr de g\u00e9latine &nbsp;<\/li><li>190 gr de chocolat blanc de couverture<\/li><li>310 gr de cr\u00e8me liquide enti\u00e8re<\/li><\/ul>\n\n\n\n<p>Faire ramollir la g\u00e9latine dans de l\u2019eau froide. <\/p>\n\n\n\n<p>Faites bouillir les 144 gr de cr\u00e8me et retirer du feu puis ajouter la gousse de vanille fendue et \u00e9grain\u00e9e. <\/p>\n\n\n\n<p>Laisser infuser au moins 10 minutes. <\/p>\n\n\n\n<p>Filtrer le tout puis reporter la cr\u00e8me \u00e0 \u00e9bullition. <\/p>\n\n\n\n<p>Dans la cuve du robot, m\u00e9langer les jaunes d&rsquo;\u0153ufs puis, tout en m\u00e9langeant, ajouter la cr\u00e8me chaude vanill\u00e9e petit \u00e0 petit dessus. <\/p>\n\n\n\n<p>Remettre le tout dans la casserole et porter ce m\u00e9lange \u00e0 82\u00b0C.&nbsp;<\/p>\n\n\n\n<p>Retirer du feu puis ajouter la g\u00e9latine \u00e9goutt\u00e9e et essor\u00e9e. <\/p>\n\n\n\n<p>M\u00e9langer. <\/p>\n\n\n\n<p>Verser imm\u00e9diatement ce m\u00e9lange sur le chocolat et mixer avec le mixeur plongeant. <\/p>\n\n\n\n<p>R\u00e9server. <\/p>\n\n\n\n<p>Monter les 310 gr de cr\u00e8me liquide bien froide en chantilly.&nbsp;<\/p>\n\n\n\n<p>Ajouter le premier m\u00e9lange refroidi \u00e0 la chantilly en m\u00e9langeant d\u00e9licatement. <\/p>\n\n\n\n<p>R\u00e9server.<\/p>\n\n\n\n<p class=\"has-background\" style=\"background-color:#ffe8e8\"><strong><em>Pour le montage : <\/em><\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Couler la mousse vanille dans le moule en remontant sur les bords.<\/p>\n\n\n\n<p>Placer la gel\u00e9e de fraises congel\u00e9.<\/p>\n\n\n\n<p>Couvrir d&rsquo;un peu de mousse \u00e0 la vanille. <\/p>\n\n\n\n<p>D\u00e9poser le financier \u00e0 la pistache et lisser.<\/p>\n\n\n\n<p>Placer au cong\u00e9lateur pour la nuit.<\/p>\n\n\n\n<p>Sortir l\u2019entremet environ 4 heures avant la d\u00e9gustation et le placer au frigo.<\/p>\n\n\n\n<p>Bonne d\u00e9gustation !<\/p>\n\n\n\n<figure class=\"wp-block-embed-instagram aligncenter wp-block-embed is-type-rich is-provider-instagram\"><div class=\"wp-block-embed__wrapper\">\n<blockquote class=\"instagram-media\" data-instgrm-captioned data-instgrm-permalink=\"https:\/\/www.instagram.com\/p\/B6q-vsnnR5N\/?utm_source=ig_embed&amp;utm_campaign=loading\" data-instgrm-version=\"12\" style=\" background:#FFF;
